Where may I find the proper bolt torque settings for engine reassembly for a S/C ecotec(300hp)?

The engine itself? In the GM service manual. The corresponding manual for the transmission is here.

If you're talking about the mounting of the engine to the frame, all of the Brammo torque specs are here. Be sure to check those values when tightening - if something feels like you're forcing it, stop and ask for advice from other owners. There are a number of errors in that document, as well as it not covering certain options (all of the torque specs for the bellcranks are wrong if you have the billet bellcrank option, for example).
